Ingredients

Ingredients: • 750 g coarse semolina (سميد) • 250 g fine semolina (فرخة) • 1 teaspoon mahlab (محلب) • 450 g butter, at room temperature (زبدة) • 75 g powdered sugar (سكر بودرة) • 25 g rose water (ماء الورد) • 25 g orange blossom water (ماء الزهر) • ½ teaspoon instant yeast (خميرة فورية) For the filling: • Celine’s pistachio halawa . Celine’s halawa chocolate

Instructions

In a large bowl, combine the coarse semolina, fine semolina, mahlab, and powdered sugar. Add the butter and rub it into the semolina mixture until well combined. Cover and let the mixture rest for a few hours or overnight for the best texture. Dissolve the instant yeast in the rose water and orange blossom water, then pour it over the semolina mixture. Gently mix until a soft dough forms without over-kneading. Let the dough rest for about 30 minutes. Take a small piece of dough, flatten it in your hand, and fill it with either Celine Homemade Delights Pistachio Halawa or Halawa Chocolate filling. Seal the dough gently and shape as desired. Place the maamoul pieces on a baking tray lined with parchment paper and bake in a preheated oven at 180°C for about 15 minutes, or until the bottoms are lightly golden. Allow them to cool completely before serving. Enjoy!
